Sugar free carrot cupcakes

I noticed carrots were the food for the month of April! Fantastic, I thought, as I am getting lots of carrots in my organic box at the moment and I love carrot cake. What I needed to do was get more protein into the cake and make it into cupcakes so that you would have fuel for pre or post class workout.

The Word of the week when I made these was CONTROL so I let go of the rigid controls of the recipe, experimented and got my best carrot cake recipe yet! It got me thinking, what if I was to do that more in life, stop trying to control situations which were beyond my control and focus instead on how I could get the best from that situation?

Citrus Carrot and Walnut Cupcakes

Please Gather:

  • 85g brown rice flour
  • 85g gluten free self raising flour
  • 250g dairy free spread
  • 100g ground almonds
  • 100g Xylitol (sugar substitute)
  • 60g walnuts broken into small pieces
  • 60g medium grated carrot
  • 1 tsp. orange essence
  • 1 heaped tsp. mixed spice
  • 1 heaped tsp. ginger
  • 1 tsp. gluten free baking powder
  • Juice of 1 lemon
  • 5 eggs, yolks and whites separated

Prepare:

  • Cream the spread and xylitol together
  • Separate the eggs and add the egg yolks to the mixture. Mix well
  • Add the juice, orange essence and mix well again
  • Pre-mix the ground almonds, flours, baking powder, mixed spice and ginger and the gradually add to the mixture
  • Stir in the carrots and walnuts
  • Beat the egg whites with a pinch of salt until you can form peaks and then gently fold into the main mix taking care not to knock the air out of the egg whites
  • Spoon into cup cake cases and bake in a pre heated oven at 200C for approximately 30-35 minutes or until golden on top or when a knife comes out clean when inserted into the middle.

Allow to cool and eat/ share/ enjoy
